Makes approx 24 patties
1 cup raw cashews toasted and chopped
2 med onions chopped
5 garlic cloves crushed
4 large carrots grated
½ kg dry chickpeas soak overnight, cook till tender, then process.
1 cup raw quinoa
1½ cups besan flour or GF bread crumbs or a combination
1 cup ground chia seeds (add more if mix too moist)
1 zucchini grated
1 red capsicum finely chopped
1 cup of chopped fresh herbs (parsley, coriander)
½ cups Moroccan spices (home made)
½ tbspn of each salt & pepper
Heat oil in pan and cook onion and garlic for 5 mins or until softened with Moroccan spices.
Add carrot stirring for 2 mins or until tender
Combine all ingredients into large bowl
Form patties and dip into sesame seeds
