1tbspn olive oil
1 tspn chilli powder
1 tspn cumin seeds
1 tspn black mustard seeds
1 tbspn fresh ginger grated
1 tspn ground coriander
600gm roughly chopped tomatoes
Salt & Pepper
100ml white vinegar
1 cup brown sugar (lightly packed)
Fry spices in oil until mustard seeds pop
Add tomatoes, sugar & vinegar. Simmer on low heat for approximately one hour
Add sultanas, cook for 5 more minutes until soft
Allow to cool and spoon into sterilised jars.
Chill and enjoy!
