Recipe: Raw Apple Pie (V)

Ingredients for crust:
1 cup cashews (or macadamia)
1 cup shredded coconut
1/2 cup pitted medjool dates
1/4 tspn pink salt

Ingredients for filling:
3 medium sized apples (Pink Lady are nicest!)
1 cup pitted medjool dates
1 teaspoon cinnamon
2 tablespoons lemon or lime juice
Pinch pink salt

Method:
Put all crust ingredients into food processor (we used a Thermomix) and process until the sticky dates are well processed, but be careful not to over-process, you want to have some texture in your crust!
Using a pie dish with a removable bottom, press your mix down firmly with your hands- if it becomes too sticky to press, lightly wet your hands with water
Chop apples for filling, keep one finely chopped apple aside
Place all ingredients (except for one apple) into processor and mix until you have a wet mixture to desired consistency
Add the remaining apple and mix through gently
Place apple mix into the crust and smooth out
Place in the freezer to set. This Raw Apple Pie keeps better frozen (tip: pre-cut slices when pie is half frozen)
