Recipe: Chocolate Avocado Cake (V)

Our Choc Avocado Cake is always a huge crowd favourite here at the Swan Valley Cafe, and we wanted to share our recipe with you!

Ingredients:
3 cups Self Raising GF flour
6 tbs cocoa
½ tsp salt
2 tsp baking powder
2 tsp baking soda
2 cups coconut sugar
½ cup rice bran oil
½ cup avocado. well mashed (1 medium)
2 cups water
2 tbs white vinegar
2 tsp vanilla extract

Chocolate  Icing:
2 cups of icing sugar
1/2 cup cocoa
1 tablespoon Nuttelex
1 teaspoon Vanilla essence
Soy milk (add small amount slowly until happy with texture of icing)

Method:

  • Preheat oven to 180 degrees C, prep a 23cm cake tin
  • Sift dry ingredients together and set aside
  • Mix all the wet ingredients together in a bowl, including the avocado (we do it in a thermo mix for about 20 second on speed 6)
  • Mix wet and dry ingredients together by hand until smooth
  • Pour into round cake tin and bake for approximately one hour
  • Wait until cool and add chocolate icing
  • Sit back, relax and enjoy the chocolatey avocado goodness!
