You’ve asked for it, and now it’s here! Get ready for a baking session with our delicious carrot cake recipe 🙂


2 cups coconut sugar, sifted
4 eggs
1 cup rice bran oil
2 cups gluten free self-raising flour
2 tsp bicarb soda
1 tsp salt
2 tsp cinnamon
3 cups grated carrot
1½ cups chopped walnuts


Preheat the oven to 180°C and grease/line a large springform cake pan.

Blend sugar and eggs with an electric mixer until creamy.

Add the oil to the sugar and eggs and stir with a wooden spoon. Fold in the flour, salt, bicarb soda and cinnamon.

Stir in the carrots and walnuts.

Pour the mix into the prepared pan and bake for one hour.


Finish it with your favourite icing or enjoy on its own with some fresh seasonal fruit!
