We make our own White Christmas at the Swan Valley Cafe, and we want to share our vegan, raw and gluten free recipe with you!
250g raw cacao butter
250g coconut oil
1 cup soaked cashews
½ cup agave
2 cups puffed rice
½ cup chopped pistachios
1 cup slivered almonds
1 cup shredded coconut
1 cup mixed dried fruit
1 cup mixed dried berries (goji/cranberries)
1 tsp vanilla
1 tsp ginger
– Melt cacao butter
– Blend cashews, coconut oil, agave, vanilla, cacao
– Mix all dry ingredients together
– Pour wet mix over and combine well.
– Press into lined tray and freeze
